Gill's cinnamon buns

Makes 3 loaves or about 2 dozen buns

2.5 cups water warmed in microwave
Mix in 3 tbsp sugar until dissolved
sprinkle on 4.5 tsp yeast
let stand 5 mins

add 3 cups flour
add 2 tsp salt
mix with dough hook
add 2 tbsp vinegar
add 1/4 cup oil
add 2.5-3 more cups of flour

 mix well. knead. add more flour or water as needed. dough should be slightly tacky not sticky.
place in oiled bowl and let stand for about an hour (until doubled in size) with a damp cloth covering it

either cut in 3 for loaves or 1/2 for cinnamon buns. Shape into loaves for bread and place into greased pans. let rise.

for cinnamon buns, flatten out each half into rectangles. butter on the top as much as you want. use butter not margarine! spread cinnamon and sugar mix (3/4 cup sugar to 3 tbsp cinnamon). roll and cut into 12. place in greased pan and let stand 1 hour.

Bake at 425 for 7 mins, turn pan and bake for another 7 mins


Sauce:
1 cup butter
2 cups brown sugar
a bit of cream
stir on stove until melted and starting to caramelize. Pour on top of warm buns

Earl Grey Scones

1 cup milk
3 earl grey teabags
3 cups flour
1/2 cup white sugar
5 tsp baking powder
1/2 tsp salt
3/4 cup butter
1 egg, beaten

Preheat to 400 F. Lightly grease a baking sheet. bring the milk to a simmer, remove from the heat and add the teabags. Let steep for 30 minutes. In a large bowl combine the flour, sugar, baking powder, and salt. Cut in butter. Mix the egg and tea-infused milk in a small bowl into the flour mixture.

Turn dough out onto a lightly floured surface and knead briefly. Roll out into a 1/2 inch thick round. Cut into 8 wedges and placed on the baking sheets.

Bake 15 minutes until golden brown.

Christmas Morning Butterscotch Buns


Mix dry ingredients

2 cups flour
2 tbls white sugar
4 tsp baking power
1 tsp salt

Cut in 1/4 cup butter or margerine

Make a well in centre. 
Pour in 1 cup milk
Stir to make soft dough

Filling

1/3 cup butter or margerine
3/4 cup brown sugar
(I also add a little butterscotch pudding powder)

Roll out dough & spread with filling. 
Roll up into a cylinder & cut into buns.

Place in buttered 8 x 8 pan. 
Bake @ 425 for 15-20 minutes.

TJ & Danielley’s Amazing Huevos Rancheros


4 slices bacon, diced
1 cup diced onion
1/2 cup diced red pepper
2 tbsp fat-free cream cheese
1 cup fresh corn, off the cob
1 clove garlic, minced
1 jalapeno pepper, seeded and finely chopped
2 teaspoons ground cumin
2 teaspoons ground coriander
1 1/2 cups cooked black beans
1 cup diced tomato
3 tablespoons chopped fresh cilantro
salt and pepper
6 small tortillas
 2 cups grated cheddar cheese
 12 eggs
sour cream, for garnish
chopped fresh coriander, for garnish


For ranchero mix, heat a large sauté pan over medium heat and add bacon. Cook until crisp, remove to drain, and remove all but 1 tbsp bacon drippings.

Add onion and red pepper and sauté until onions are translucent, about 5 minutes. Stir in corn, garlic, jalapeno, cream cheese and spices and cook for 2 minutes.

Add beans and tomato and cook until warmed through. Remove from heat, stir in coriander and season to taste.
Preheat oven to 400 F.

Grease 6 8-ounce ovenproof dishes and line each with a tortilla. Spoon ranchero mix into each tortilla and sprinkle with grated cheddar. Break 2 eggs into each dish and season lightly.

Bake for 15 minutes, or until eggs reach desired doneness. Place each bowl on a saucer (the bowls will be hot) and top with a spoonful of sour cream and a sprinkle of coriander and serve immediately.

Naturally if there is only 2 of you just throw the right amount of ingredients into a pan to cook. The spoon into tortillas and eat while watching a delightful DVD!

Really Nice Sunday Morning Pancakes


1 1/2 cups all-purpose flour
3 1/2 teaspoons baking powder
1 teaspoon salt
1 tablespoon white sugar
1 1/4 cups milk
1 egg
3 tablespoons butter, melted

In a large bowl, sift together the flour, baking powder, salt and sugar. Make a well in the center and pour in the milk, egg and melted butter; mix until smooth.

Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot.

Morning Biscuits

Preheat oven to 450 degrees F. 
Bake on ungreased cookie sheet for 12-15 minutes, till golden in colour.

1 3/4 cups flour
1/2 tsp. salt
3 tsp. baking powder
4-6 tbsp. butter/soy margarine
mix in 1 cup milk

Don't spend too much time mixing this together. Just enough to get a nice batter. Lumpy is good. Plop medium to large spoonfulls of the batter, spaced out on an ungreased cookie sheet (use some sense when doing this -- not too close!). Makes anywhere from 8 medium sized biscuits to 10 or 12 small ones. Bake 12-15 minutes.
