Mom's recipe - Veal Parmigiana


1/2 cup bread crumbs
1/2 parmesan
1/2 tsp salt
1 lb veal scallops or cutlets
2 tbsp flour
1 egg
3 tbsp oil
6 oz mozzarella 
1 can tomato sauce
Mix crumbs, parm and salt. dredge4 veal with flour, dip in egg, coat with crumbs. Heat oil in large pan - brown veal. Place in 8x8x2" pan. Cover veal with mozza cheese , pour tomato sauce over. Bake at 350F for 10 mins.
